Wordless Wednesday and Charlie



Yesterday, Charlie was not feeling good again so we took him back into the Doctor. As his throat was hurting and his Stomach has been again. So they checked his ears which was red. But not bad enough to give him any medicine for it. Plus his throat which she says looked OK. Then we asked about some bumps he has that has been popping up all over and she says they was nothing to worry about. Which did not ease Davids mind as he wanted to know what they was.



Plus sometimes they itch and she told Charlie not to scratch them. Which he does. So I wanted her to give him something to put on them but she didn't. She just told him do not scratch them or they will spread. Come on lady he is 7 he is not going to remember not to scratch them if they itch. Heck I wouldn't either!!

Then we talked about his stomach and his legs hurting and she said he might have a allergy to milk and be Gluten free. Which none of the other doctors ever mentioned. So she did blood work on Charlie and it will take us two weeks to get the test back. So Please Pray these test show something as I am so tired of Charlie hurting. I wish I could take it from him which we all know we can't!!

But there was two funny things that happened during this trip to the doctor. Not that going to one is funny. But I thought I would share with you what Charlie said. As they sent us to get lab work and he hates needles and most of the time it hurts.



So as we approached the doctors office to have the lab work done Charlie say's I think I will wait until I am a "TEENAGER" which would be 8 year, but I let him know that would not work so we went on in. They did the lab work and when we was leaving and got to CVS to pick up his prescription for his allergies Charlie asked me to tell dad to take the corners easier as he was doing it too hard and it was making his blood turn sideways and it might fall out and it was hurting him from where they drew the blood.

Once we got home I had to open the car door for him and help him into the house and onto the couch. Make him his dinner and bring it to him. As well as find a TV show for him to watch as he was too tired from all the blood they drew.



Now mind you David tells him y your OK  just get up and move around. But not mommy it was a chance to baby him and cuddle with him. Which he does not let me do as he is too big for that. So I milked it for all it was worth and crawled up on the couch with Charlie and took a nap, Which lasted for about 30 minutes. But it was worth every minute of it.

After that he was out the door and I did not see him for hours. But later that night he came in and said "Thank you" Mommy I love you and I am glad you went to the doctor with me. I wasn't as scared with you there. My heart just melted!!



I love you Charlie to the moon and back!!

My moms Birthday

Today is Sunday and so I thought I would start the week off with a review on
Gold Label Organic Virgin Coconut Oil that I was able to secure for a review through Tomoson. Even though I was sent a jar all the thoughts in the review are mine and my families no one else. 



I had such big plans for it once it arrived as I knew my mom would be here and it was her Birthday so I thought I would suprise her with a homemade Cocunut Cake. Only God had a surprise for me and the week before her Birthday we had a friend pass away and so she came done early for the Funeral. Not knowing what was in store for my mom I should have made the cake then. But hindsight is 20/20.

So I waited as I knew she would be done the next weekend only I end up getting a phone call saying there are admitting my mom into the hospital. She has since been released but the doctor will not release her to travel. Plus they just found some more spots on her Lungs that may be Cancer.

So I still did not get to make her her cake. But what I did was I had my sister order a bottle of the Coconut Oil for there house and make my moms cake for her as both she and my brother love Coconut Cakes and they both said it was the best one they had ever had.

As for my jar I made David a early Birthday Cake and he loved it and could not stop raving about it. I even had some left and another friend passed away on Friday and Davids mom is using some to make a car for the family. This is the cake I made for David and I liked that it is Gluten Free as I have a friend who has to live by this diet so on her Birthday I can finally make her a cake that she will be able to eat as well. I love that there is so many recipes on the site as there is so much I want to try out such as the Coconut Pies as this is another of Davids favorite desserts. Plus I even saw a Cheesecake I can make for him.

Servings: 12
Preparation Time: 15-20 minutes
  • 5 large egg whites, at room temperature
  • 3/4 cup of coconut cream (this is the thick cream on top of coconut milk)*
  • 1 large egg, at room temperature
  • 1 teaspoon coconut extract
  • 1 teaspoon vanilla extract
  • 3/4 cup + 2 tablespoons coconut flour
  • 1 1/2 cup whole sugar
  • 2 tablespoons baking powder
  • 3/4 teaspoon salt
  • 10 tablespoons butter (1 1/4 sticks) or coconut oil, cut into 10 pieces and softened
  • 1/2 cup shredded coconut
1. Preheat oven to 325 degrees. Whisk egg whites, coconut cream, whole egg, and extracts together in a large bowl until combined. Set aside.
2. In a separate bowl mix coconut flour, whole cane sugar, baking powder and salt together.
3. Using an electric mixer, combing flour mixture with butter pieces or coconut oil, one tablespoon at a time. Add 1 cup of egg mixture, increase the speed to medium-high, and beat until light and semi fluffy. Add the remaining egg mixture in a steady stream and continue to beat until the batter is combined. Mix in shredded coconut.
4. Pour batter into a 9×13 pan. Bake for 35-40 minutes or until a toothpick inserted into the center of the cake comes out with a few crumbs attached. The cake will be very golden brown. Let cool before frosting.
5. Frost cooled cake. Top with toasted coconut and serve.
* For the freshest coconut milk make homemade coconut milk. (See video at this link.)

If I did not watch David he would just sit and eat it right out of the jar as he loves the way it tastes.I like how easy and versitle it is to use. I can tell you that I think it would make a nice Gift to give at Christmas for people who bake. As you could give them some of the items off the site and they could see what they could come up with to make as there is also a flour they sell.
